Easy Vegan Valentine's Day Breakfast

Looking for a quick and easy vegan Valentine's day breakfast to make for your loved ones? You got it! Toasted bread topped with seasoned mashed avocado, heart-shaped tomatoes, and a drizzle of balsamic glaze is delicious, filling, and festive!

My mom always made a special heart-shaped breakfast for me and my brother on Valentine's day. I think that definitely rubbed off on me because now I make this special Valentine's breakfast for my husband! This recipe is perfect for you if you don't have a lot of time to cook in the morning, but you still want to make something special for your kids or partner. 

Avocado toast is a filling and delicious breakfast that's easy to make and it only takes a few minutes to zhuzh it up with handmade tomato hearts and a balsamic glaze drizzle! How To Make It - Step by Step Instructions

This vegan Valentine's day breakfast is so quick and easy to make! First, mash the avocado in a bowl. While you're cutting the tomatoes, toast the bread.

Hold one grape tomato at an angle and slice the side with the stem off with a sharp paring knife. Next, turn the tomato so the sliced end is resting on the cutting board and cut the tomato in half down the center. Spread the mashed avocado on the toasted bread and season it with a sprinkle of garlic powder, salt, and pepper.  

Turn the two tomato halves so they fit together like a heart and place them on top of the avocado toast. The mashed avocado will act like glue and hold them in place. Drizzle balsamic glaze over the top before serving.

Serving Suggestions

I make this festive breakfast for my husband on Valentine's day every year! I usually serve it with a side of fruit like sliced apples or pears, blackberries, and blueberries. You could also serve it along with a hot pink lemon pomegranate smoothie, a bowl of rawnola, or a tofu scramble. 

How To Store It

This festive heart-inspired breakfast is definitely best enjoyed fresh. It doesn't reheat well, so don't make it in advance or store leftovers.

Notes & Substitutions

  • Grape Tomato Substitutions: You can use grapes, kiwi berries, or gooseberries. 
  • Can I use cherry tomatoes? You can, but grape tomatoes are best because of their oval shape. If you use cherry tomatoes, the hearts will be rounder but you can trim it to make it work.
  • What's the best vegan bread to use? I like to use Ezekiel bread or homemade no-knead vegan whole wheat bread. Looking for more vegan bread brands? See my list, here.
  • Avocado Substitutions: You can use hummus, vegan cream cheese (I like Kite Hill chive cream cheese), or fruit jam instead of mashed avocado. 

Success Tips

  • Use oval-shaped grape tomatoes (the longer the better) to make the most realistic-shaped hearts. If you use round tomatoes, the rounded part of the heart will be too short.
  • Sprinkle the seasonings on top of the mashed avocado before you add the tomatoes so they will stick to the avocado. 
  • Wait until right before you serve to drizzle the balsamic glaze on top for the best presentation.

Equipment

  • Toaster Oven
  • Paring Knife

Ingredients

  • 2 slices vegan bread toasted
  • 1 medium avocado mashed
  • 6 medium grape tomatoes
  • ⅛ tsp garlic powder
  • ⅛ tsp salt
  • ⅛ tsp black pepper
  • 1 tbsp balsamic glaze

Instructions

  • First, mash the avocado. Put both slices of bread into the toaster oven to toast for 3-4 minutes or until crispy.
  • While the bread is toasting, make the tomato hearts. Hold one grape tomato at an angle and slice the stem side off. Lay the tomato on the side you just cut and slice the tomato in half. 
  • Spread the mashed avocado on the toast and season with a pinch of garlic powder, salt, and black pepper. Arrange the tomato halves into hearts and place three hearts on top of each slice of toast. Press down lightly so they stick to the avocado.
  • Drizzle with balsamic glaze before serving. 

Notes
