This hearty vegan split pea potato soup is highly satisfying and protein-packed! The first week of March, Travis and I were in Disney World for the Epcot Flower and Garden Festival (wanna see the new vegan Garden Graze at the festival? Watch this video!), and we went to Sweet Tomatoes for dinner on one of the nights during our trip.
We love going to Sweet Tomatoes because they make it so easy for vegans to eat safely and healthfully! All of the food choices are labeled if they’re vegan, and they usually have quite a few tasty options. The night we went, they made the most delicious split pea potato soup.
Split peas have a sweet earthy flavor with a texture like lentils (and a similar shape) that pairs perfectly with other vegetables and herbs like thyme, basil, and parsley. The soup tasted super comforting, flavorful, and satisfying.
The soup also contained potatoes along with other vegetables. I love when soups include potatoes because while the soup cooks, the potatoes soften and break down which naturally thickens the broth. It’s so creamy and delicious!
