Watermelon Feta Skewers

These watermelon feta skewers are perfect to make for the 4th of July! This appetizer is so easy to make, it's red, white, and blue, and you can make it ahead of time to prep for your party!

I usually spend the Fourth of July outside at a cookout or pool party with family, friends, and lots of delicious food! Bring on the veggie burgers, carrot dogs, pasta salads, coleslaw, and ice cold wedges of watermelon.

My favorite dish to bring to share are these red, white, and blue watermelon feta skewers with balsamic glaze drizzle! They are delicious, easy to eat, and so festive! You don't have to cut the watermelon into little stars but it sure is cute.

The combination of sweet watermelon, salty dairy-free feta, and tart blueberries is sooo goooood and it's refreshing on a hot summer day. I might be a little biased but I think it's the perfect appetizer to serve at your Fourth of July party, BBQ, or potluck. 

How to Pick the Best Watermelon

Before you make the skewers, you need to pick out the perfect watermelon. There are a few important things to look for when you pick out a watermelon.

  1. Shape - Round watermelons taste sweeter than the long, oblong watermelons.
  2. Field spot - The white/yellow spot on the bottom of the watermelon is called the field spot. The field spot is the side that the watermelon laid on in the field where it grew. Look for a watermelon that has a golden yellow spot, not a white spot.
  3. Webbing - You want to look for the watermelon that has the most webbing or sugar lines. The more sugar lines the watermelon has, the sweeter it should taste.

Ingredients & Substitutions

  • Watermelon - Watermelon is a summer staple, so it's a no-brainer to use it for this recipe. You could also use strawberries.
  • Blueberry - Instead of blueberries, you could use blackberries or black grapes. The color is a little darker but it would still get the point across.
  • Feta - I used a block of dairy-free feta (Violife is my favorite), and it was delicious! If you're not a fan of feta, you could substitute chunks of white dragon fruit or baked tofu. 
  • Balsamic Glaze - Make sure to use the glaze, not just the vinegar. The glaze is sweet and tangy and thicker so it's perfect for topping and drizzling over the skewers.

How to Make It 

Start by cutting a small watermelon into slices and then use a small star-shaped cookie cutter to cut out 24 watermelon stars. Next, cut a block of feta into small cubes.

Hold the toothpick or small skewer with one hand and use your other hand to slide the watermelon star on first, and then slide the blueberry on the skewer. Lastly, add the chunk of feta on the end of the skewer but don't push it all the way through or it may crack.

Arrange the skewers on a platter and garnish with a drizzle of balsamic glaze.

How To Store It

Store the watermelon feta blueberry skewers in an airtight container in the fridge for 2-3 days. Don't freeze it, it won't defrost well.

Can I make it in advance?

You can make the skewers the day before and store them in an airtight container in the fridge. When you're ready to serve the skewers, arrange them on a platter, and garnish with a drizzle of balsamic glaze

How do you cut a watermelon for skewers?

Cut the watermelon in half and then cut the half into about ½" thin slices. Then you can use the cookie cutter to cut out the watermelon stars.

What size cookie cutter should I use?

A small, 1-inch star-shaped cookie cutter is the perfect size to use for the watermelon stars. 

What should I do with the leftover pieces of watermelon?

Eat it! Or you could cut it up and use it to make watermelon fruit salsa.

Sweet and salty ingredients balance each other. The combination enhances and increases the flavors of all the ingredients.

Expert Tips

  • Use a star-shaped cutter, it will save you so much time! You can cut the watermelon stars out by hand, but it's very time intensive and the shapes won't be uniform.
  • Be gentle with the feta because it crumbles easily. That's why you don't want to stick the toothpick all the way thorough the chunk of feta because it will break apart. Simply stick the toothpick or skewer in far enough just to secure it, but don't push it all the way through.
  • Make sure to use balsamic glaze, not vinegar. The glaze is thicker and is better to use for a topping. 
  • Serve the watermelon and feta skewers on top of fresh greens on a platter for a nice presentation.

  • Small Star-Shaped Cookie Cutter

Ingredients

  • 1 small watermelon
  • 6 oz blueberries
  • 7 oz block feta (I used dairy-free Violife feta)
  • 2-3 tbsp balsamic glaze

Instructions

  • Cut the watermelon into slices and then use the star cutter to cut out 24 small stars. Next, cut a block of feta cheese into 24 small cubes.
  • Hold a toothpick with one hand and use your other hand to slide the watermelon star on first, then the blueberry, and then push the pointy end of the skewer into the chunk of feta. Be very gentle and don’t push it all the way through the feta or it may crack. 
  • Arrange the skewers on a platter and garnish with a hefty drizzle of balsamic glaze.
