Loaded with beans, roasted sweet potatoes, corn, red peppers, fresh cilantro, and fluffy quinoa, this salad is super flavorful and great for meal prep!

Gather all of the ingredients you'll need to make the recipe.

First, start cooking the quinoa in a separate pot. When it's done, set it aside while you make the rest of the salad.

While the quinoa is cooking, chop and season the sweet potatoes. Bake them until they are tender.

While the potatoes are roasting, whisk together all of the salad dressing ingredients.

Combine the beans, corn, bell pepper, red onion, roasted sweet potatoes, cooked quinoa, fresh cilantro, and dressing in a large mixing bowl.
