Creamy Cauliflower Spinach Pearl Couscous

A simple, healthy couscous side dish that is so creamy and indulgent but has no heavy cream or butter in it! I served this cauliflower spinach pearl couscous with grilled chicken last night for dinner & everyone loved it! This is healthy comfort food!

  • Cook frozen spinach in a large pan over medium-low heat. Once fully defrosted, add the cauliflower sauce, garlic powder, & mix together. Taste and season with salt and pepper.
  • As soon as you put the spinach in the pan, start cooking the pearl couscous according to package directions in a separate pan.
  • When the couscous is done, season with salt and pepper and add ¼ cup parmesan cheese. Pour couscous into the large pan that has the cauliflower sauce in it. Stir until everything is evenly coated with sauce. Remove from heat, add chopped parsley, and lemon juice. Stir.
