This heirloom tomato caprese sandwich recipe is one of our favorite easy vegan lunches! It's everything you love about caprese salad but in sandwich form + it's ready in 5 min! Vegan, dairy-free.

Easy Vegan Caprese Sandwich

Thick-cut slices of juicy heirloom tomatoes, creamy vegan mozzarella, fresh basil, and tangy balsamic glaze between two slices of toasted bread makes a delicious, easy vegan sandwich that you can enjoy for lunch or dinner!

  • 2 slices lightly toasted bread (I used Ezekiel bread)
  • 1 cup mixed greens
  • 1 large heirloom tomato sliced thick
  • 2 slices vegan mozzarella cheese (I used Miyoko's fresh vegan mozzarella)
  • 3-4 fresh basil leaves thinly sliced (or use vegan pesto spread)
  • 1 tsp balsamic glaze


  • Put one piece of lightly toasted bread on a plate and stack 1 cup of mixed greens, 2-3 thick slices of tomato, 2 slices of vegan cheese, fresh basil, and a drizzle of balsamic glaze. Top with the second piece of toasted bread and press it down lightly. Slice in half before serving.
  • You can enjoy the sandwich cold or press it for a few minutes on a panini press until the cheese melts and serve it hot.


  • The tomatoes are the "meat" of this easy vegan sandwich, so make sure to pick ripe tomatoes and cut em' thick! 
  • This sandwich can be eaten cold or pressed and hot. It's up to you, both ways are delicious. 
  • You can use any vegan cheese you like, but to make this a vegan caprese sandwich, you need to use vegan mozzarella cheese. 
  • This sandwich is best enjoyed fresh, but you can store leftovers in an airtight container in the fridge and then press it until hot to reheat it the next day.
