Grilled Tomato Crostini with a Balsamic Glaze

  • Heat the griddle to 200 degrees.
  • Drizzle olive oil over the whole griddle. Place the baguette rounds on one side and flip to coat both sides with olive oil. Let the slices cook for 3-4 minutes, turn halfway through. 
  • Put the tomatoes on the other side of the griddle, season them with rosemary, garlic powder, salt, and pepper. Cook for 5 minutes. 
  • Spread a light coat of goat cheese over each baguette slice. Put 1 tbsp of the tomato mixture on top of each slice. 
  • Drizzle balsamic glaze over the whole platter and top with parsley.
