Zucchini Pizza Bites

Ingredients

  • 2 Tbsp olive oil
  • 2 large zucchini, cut into 1/4 inch rounds
  • 2 cups mushrooms, sliced
  • 1 small yellow onion, diced
  • 1 garlic clove, minced
  • 1 large tomato, diced
  • Sea salt and pepper to taste
  • 1 tsp pizza seasoning
  • 1/2 cup marinara sauce
  • 1/2 cup vegan shredded mozzarella cheese (I use Violife vegan cheese)
  • 1 Tbsp chopped parsley for garnish

Instructions

  • Slice the zucchini (into 1/4 inch rounds) and the mushrooms. Dice the onion and tomato. Set aside.
  • Set the oven to a high broil. Line a large baking tray with parchment paper.
  • Saute the zucchini in 1 Tbsp of olive oil over medium heat in a large pan for 2-3 minutes on each side. Season with sea salt & pepper. Cook until just slightly tender. If they're too soft then they won't support the toppings. Remove the zucchini from the pan and place in rows on the tray.
  • In the same pan, add 1 Tbsp olive oil and add the onions and mushrooms. Cook until soft. Add the diced tomatoes, garlic, pizza seasonings, salt, and pepper. Cook for 5 minutes. 
  • Spoon 1/2 tsp of marinara sauce onto each zucchini round. Add 1 Tbsp of filling onto each zucchini round and top with vegan cheese.
  • Put the tray into the oven for 1-2 minutes, just until lightly browned and cheese had melted. Take the tray out and garnish with parsley.
