Cranberry Fig Granola

Cranberry fig granola will give your morning an energizing boost! Toasted oats, sweet shredded coconut, figs, cranberries, raisins, almonds, and mixed seeds. Vegan.

  • ¼ cup dried cranberries
  • 3 dried figs, chopped

Instructions

  • Preheat the oven to 300 degrees.
  • Combine all dry ingredients in a large bowl except for the cranberries, raisins, and figs. Combine all wet ingredients in a separate bowl.
  • Add the wet ingredients to the dry ingredients and mix well. Line a tray with parchment paper for easy cleanup. Pour the granola mixture onto the tray and spread it out evenly. Bake for 40-45 minutes.
  • When you take the granola out of the oven, try to break it up into big pieces because it will harden quickly and then it will be hard to break. It will feel slightly soft but it will crisp up as it cools.
  • Add the cranberries and figs to the cooled granola.

  • Store leftovers in an airtight container.
