Ingredients

  • 1 lb ground beef or ground turkey! Both turn out well!
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 28 oz can tomatoes whole, diced, or crushed. Your choice
  • 1 14 oz can tomatoes whole, diced, or crushed. Your choice
  • 1 ½ cups cooked kidney beans equivalent of one 14oz can
  • 2 TBSP chili powder
  • 2 TBSP cornmeal
  • 1 tsp sugar
  • ½ tsp oregano
  • ½ tsp cumin
  • ¼ tsp cayenne pepper optional
  • Salt and pepper to taste

Instructions

  • Just get a big pot heated and throw in some ground beef (or ground turkey!). When it’s all browned, if there’s a lot of fat then go ahead and drain it. If there isn’t too much, just leave it. A little is fine, but you don’t want too much.
  • Throw in some chopped onion and minced garlic after the meat is done, and let the veggies get soft. Add the seasonings and let them toast a minute or two with everything else, then add all of your tomatoes, juice and all.
  • Let it bubble up, then turn it down low and let it simmer for a good 45 minutes. Add your beans and simmer another 15 minutes. Measure out 2 tablespoon of cornmeal to about ¼ cup of water, then add to the chili. The cornmeal will help thicken everything up.
