Lentil Quinoa Ball Sandwich

Use up last night's dinner leftovers and make this easy protein packed vegan lentil quinoa sandwich for lunch. Meaty lentil quinoa balls, creamy mashed avocado and crunchy cabbage will fill your belly with happiness!

Ingredients

  • 2 pieces of Ezekiel bread or whatever bread you like
  • ½ cup red cabbage, thinly sliced
  • ½ avocado (mashed & seasoned with salt, pepper & cayenne)
  • 4 lentil quinoa balls (leftover)

Instructions

  • Lightly toast the bread slices.
  • Mash half the avocado, spread on top piece of bread. Season with sea salt, pepper, and cayenne.
  • Put sliced cabbage on one piece of bread and add the lentil balls. Put the avocado slice on top and lightly press down with your palm to help everything combine.
