Millet & Brown Rice Zucchini Ramen Noodle Bowl

Craving pasta? Try this healthy millet and brown rice zucchini ramen noodle bowl instead! It's ready in less than 10 minutes so it's perfect for a quick lunch or dinner and it's loaded with hidden veggies! Vegan.

Instructions

  • Cook ramen according to package instructions.
  • Whisk together sauce ingredients in a small bowl. 
  • While the ramen is cooking, spiralize the zucchini and saute in a medium pan for 2-3 minutes. Don't cook it too long or it will get mushy. 
  • Add the warm ramen noodles and sauce to the pan with the zucchini noodles, mix to combine. 
  • Garnish with green onions and cilantro.
