Cook the rice and sweet potatoes first because they take the longest.

Next, saute the onions in a large pan until they are soft and translucent.

Now we're going to add flavor! Add the garlic, tomato paste, and dried seasonings to the onions.

Add the cooked rice, sweet potatoes, and black beans to the pan with the onions. Stir to combine. This is the filling for the enchiladas!

Pour a little bit of enchilada sauce into the bottom of a large casserole dish and spread it around.

Fill each tortilla with a hearty scoop of the sweet potato and black bean rice filling.

Place the filled tortillas into the dish. Top with enchilada sauce and vegan cheese. Bake for 25-30  minutes.
