This hearty soup is filled with leeks, carrots, cabbage, creamy white beans, collard greens & a vibrant golden broth! It's easy to make in one pot + it's ready to eat in 1 hour!

Wash and prep all the vegetables for the soup. Pay extra attention to the leeks because dirt likes to hide in all the layers.

Cook the leeks, sliced carrots, and sliced celery until they start to soften.

Add all of the dried seasonings and bay leaf to the pot.

Next, add the chopped green cabbage and cooked beans to the pot.
