Curried Tofu Scramble

This curried tofu scramble is an easy to make breakfast that's high-protein  and it's loaded with vegetables! This dish is great for breakfast or brunch!

First, press a block of firm or extra firm tofu in a press for 30 minutes. Drain the liquid.

Saute the veggies in a large pan. Push them to one side and add the tofu to the other side. Use a spatula to break it into crumbles.

Add the dried seasonings. Gently toss until the turmeric powder evenly coats the tofu and it's all yellow.

Mix the tofu and veggies together and add the fresh spinach.

Serve with roasted potatoes or fruit for a delicious breakfast or brunch! It can also be used as a burrito filling!
