Pomegranate Wild Rice Christmas Salad

This festive Christmas salad is the perfect side dish to serve with your holiday meal! Loaded with arugula, nutty wild rice, roasted pecans, juicy pomegranate arils, greens onions, tart dried cherries, and tangy garlic dijon dressing; this hearty salad is a major crowd pleaser! Vegan and gluten-free.

This is my all-time favorite salad! I love the combination of flavors and textures, it’s so incredibly delicious and it’s such a good Christmas salad! The festive red pomegranate arils and green arugula ingredients make this the perfect vegan holiday side dish! 

The first time that I made this simple salad was for our Christmas dinner a few years ago and my family (especially my mom) fell in love with it!

Now, my family loves this wild rice pomegranate Christmas salad recipe and they request it at every holiday, so I usually end up making it for almost every single family get-together or holiday gathering.

The combination of peppery arugula, tart dried cherries, nutty wild rice, sweet pomegranate arils, and roasted pecans tossed in a tangy garlic dijon dressing is so tasty! This vegan wild rice salad is definitely a crowd-pleaser and I think that you’re going to love it as much as we do!

This quinoa salad recipe has it all! Crisp carrots, peppery baby arugula, tender artichoke hearts, crunchy toasted walnuts, and tart dried cherries tossed in a tangy oil-free dressing. It’s easy to make and it pleases allll the tastebuds! Vegan, gluten-free, soy-free.

Last year, on this day, at this exact moment, I was onboard the Disney Fantasy ship with my husband, Travis, eating lunch at Cabana’s and waiting for to set sail on our eastern Caribbean honeymoon cruise! I sure wish I was doing the same thing right now! I am very excited though because we’re planning another Disney cruise later this year and I can’t wait to share it all with you! Mandarin Orange Quinoa Spinach Salad with Mango Kiwi Dressing

Summery quinoa spinach salad with sweet mandarin oranges, blueberries, red onions, toasted pecans, and tangy mango kiwi dressing will be your go-to healthy lunch. Vegan, dairy-free, gluten-free. 

Happy first day of August!

AKA my birthday month and the last month of summer! Woohoo!

The summer has flown by and I’m 100% okay with that. I made a goal for myself to get outside more and enjoy the summer so we’ve been biking every weekend, we went on a Disney cruise, we’ve gone to the beach a few times, and we even took a day trip to Rainbow Springs to go swimming.

It’s been deathly hot here, every day it reaches 95-100 degrees! Ugh, it’s definitely not ideal weather to be cranking the oven on for. So, I’ve been trying to cook recipes that don’t require the oven or need to be heated up. We intentionally don’t have a microwave so our only options are to turn on the stove or the toaster oven.

For this quinoa spinach salad recipe, I cooked the quinoa the night before so I wouldn’t heat the kitchen up during the day. You can eat this salad warm or cold, it’s really delicious both ways.
