A sweet, spicy, and tangy mixed berry salad with raspberries, strawberries, blueberries, avocado, red cabbage, black pepper pecans, and a balsamic vinegar dressing. Vegan.
Doesn’t this just scream summer? I love all the bright colors! It would be great for a party, BBQ or just for lunch (I had it for lunch today! YUM). It’s easily customizable with whatever fresh fruit you have.
Of course, before I made the salad I had to play with my toppings first. =)
How to Make Mixed Berry Summer Salad
This salad is really easy to make too. I washed and prepped all my fruit, cabbage and avocado and set it aside. I used a mix of organic spinach, kale, and swiss chard but you can use whatever leafy greens you have on hand. I sprinkled the red cabbage over the greens and then topped with all my berries and sliced avocado.
I really like avocado in my salad because it’s so creamy, so I thought a banana would give a similar creamy consistency. It did! For a crunchy touch, I used my favorite spicy pecan mix. The pecans are peppered and went perfectly with the dried cranberries and all the sweet fruit in the salad.
I drizzled (Trader Joe’s) balsamic glaze over the top and that’s it! If you don’t have the glaze, regular balsamic vinegar would work just as well. The glaze just has a thicker consistency but it’s the same flavor. Enjoy your sweet, spicy, creamy, tangy mixed berry salad!
Mixed Berry Summer Salad
- 3-4 cups Mixed greens
- 1 cup Red cabbage, sliced thin
- 1/4 cup Raspberries
- 1/4 cup Blueberries
- 1/4 cup Strawberries, sliced
- 1/2 avocado, sliced
- 1/4 cup Pecans
- 1/2 Banana, sliced
- Sprinkle of dried cranberries
- 1 Tbsp balsamic glaze
- Add all ingredients to a large bowl and top with balsamic drizzle. Enjoy!
