I didn’t decorate the house at all, but I did listen to some Christmas music the other day. Not gonna lie!
I did contemplate making some white chocolate peppermint bread, ginger and orange cookies, or a pitcher of cranberry ginger Christmas margaritas. I decided that might be a little much so I opted for a zucchini ramen noodle bowl instead.
Brown Rice Millet Ramen Cakes
I seem to crave pasta a lot.
But I know that binging on white flour pasta is pretty pointless. It lacks any kind of nutrients and even though it’s delicious, it’s just a filler food.
When I get a pasta craving, I like to make one of these brown rice millet ramen cakes. Millet is full of vitamins, nutrients and is also gluten-free, so it’s a much healthier option.
Hidden Veggie Zucchini Ramen Noodle Bowl
Another method I use to trick my brain is to spiralize a large zucchini and add it to the pasta. I swear when you mix the two together it looks just like regular pasta and it feels like you’re getting a huge portion! Hidden veggies are the best!
This zucchini ramen noodle bowl is so easy to make and is ready in less than 10 minutes. It doesn’t get any better than that!
As most of you know, I got my brand-spanking new OXO spiralizer a few weeks ago. I love it so much and it’s perfect for spiralizing any type of veggie (like beets, butternut squash or sweet potatoes) or when I’m doing large amounts of veggies to go with my favorite roasted cauliflower cashew cream sauce.
I did keep my handy dandy little vegetti spiralizer because it’s so small that I can whip it out when I just want to spiralize one zucchini and not make a big mess.
This ramen noodle bowl is a meal I make often just for me. Sometimes I’ll add any other leftover veggies I have in the fridge but this is the base recipe that I love and it really hits the spot.

Cook ramen according to package instructions.
Whisk together sauce ingredients in a small bowl.
While the ramen is cooking, spiralize the zucchini and saute in a medium pan for 2-3 minutes. Don't cook it too long or it will get mushy.
Add the warm ramen noodles and sauce to the pan with the zucchini noodles, mix to combine.
Garnish with green onions and cilantro.
