We’ve been using the leftover lentil balls in tacos, “meatball” subs, and burritos all week. But my favorite new creation is this lentil quinoa ball sandwich!
Turn Leftovers into a Completely Different Meal!
I know some people don’t like eating leftovers, but I LOVE them. Why? Because usually, that means I don’t have to cook dinner the next night! I doubled the batch of these lentil balls so I would have enough leftover to make a few of these lentil quinoa sandwiches during the week.
To the people who don’t care for leftovers, try turning them into a completely different meal and I think you’ll change your mind! They won’t even seem like leftovers anymore.
Lentil Quinoa Ball Sandwich Toppings
The flavors of the lentil quinoa balls are subtle so they can work in so many different recipes. Doesn’t every sandwich need something creamy and something crunchy? I think so.
Red cabbage is my favorite crunch factor, I just love the bright purple color! Have you ever tried it in a grilled cheese sandwich?! Yum. I still want to know why they call it red cabbage when it’s obviously purple. If you know why, please tell me!
I try to eat one avocado every day. They’re packed with healthy fats that are so good for you. I like to mash them to the consistency of a creamy sauce for my sandwich. After I mash it and spread it on the top piece of bread, I sprinkle a little sea salt, pepper and a sprinkle of cayenne pepper for a little kick.
You can use plain sliced red cabbage, or I’ve also put my favorite ginger asian slaw on the lentil quinoa sandwich too.
This sandwich is a little bit messy but so worth it.
I ate this exact sandwich 3 days in a row and I’m still not over it. Does anyone feel like making one for me right now? I’m out of lentil balls!

Lentil Quinoa Ball Sandwich
- 2 pieces of Ezekiel bread or whatever bread you like
- 1/2 cup red cabbage, thinly sliced
- 1/2 avocado (mashed & seasoned with salt, pepper & cayenne)
- 4 lentil quinoa balls (leftover)
- Lightly toast the bread slices.
- Mash half the avocado, spread on top piece of bread. Season with sea salt, pepper, and cayenne.
- Put sliced cabbage on one piece of bread and add the lentil balls. Put the avocado slice on top and lightly press down with your palm to help everything combine.
