I never really liked eating breakfast– I just want my coffee! I’m just not hungry right when I wake up, but I’ve found it’s much easier to eat breakfast when I have fruit ready to go.
My favorite quick breakfast is avocado toast with cayenne pepper, sea salt, and pepper on rosemary parmesan bread. I’ll have some type of fruit with it, either a banana, orange or an apple. I still have my coffee, I just have it with my breakfast instead of as my breakfast.
Chocolate Pudding Cups
Cutting down on desserts is much harder for me. I love a sweet treat after dinner, don’t you?! Don’t take my treats away from me!!
Instead of cutting them out completely, I decided to upgrade them with better for you ingredients so I wouldn’t feel bad eating them. Like these chocolate strawberry jam filled muffins.
Remember when you were little and you’d get a pudding cup in your lunch box or after dinner for dessert? I especially loved those cheesecake varieties with the flavored fillings on top. I’ve recently discovered and fell in love with chocolate pudding that’s made from avocados. If you haven’t tried it yet– get on it! The avocado blended with cocoa powder makes the creamiest pudding ever and it’s actually good for you!
The avocado chocolate pudding is so thick and creamy that it makes the best pudding base for a pureed fresh fruit topping– just like those pudding cups I used to love!
Since Valentine’s day is tomorrow, I thought this would be the perfect dessert for after our dinner at home. We don’t go out on the actual day with the masses. This year, we celebrated early by going to a local food & wine festival at the beach, and yesterday, Travis surprised me with a dinner cruise around the harbor.
It’s pretty ridiculous how easy to make these pudding cups are. I used my Nutri bullet to make the pudding and the strawberry fruit topping, so clean-up would be easy, but you can make this in any blender or food processor. Just make sure you rinse the cup between making the pudding and the fruit puree.
I love the chocolate and strawberry flavor combo, yum. Dare I say I liked my pudding cup better than the pudding cups I had when I was a kid? Yeah!!!
These chocolate strawberry pudding cups aren’t just for Valentine’s day either– you can have these any time of the year and feel guilt-free when you eat them!
5 Minute Chocolate Strawberry Pudding CupsPrint Pin Rate
- 1 avocado
- 1 ripe banana
- 2 Tbsp maple syrup
- 1/4 cup cocoa powder (or more to taste)
- Pinch of sea salt
- 1 cup of strawberries tops removed
- 1/4 cup DOVE® Dark Chocolate Strawberry & Cocoa Almond for topping (optional)
- Blend avocado, banana, maple syrup, cocoa powder and sea salt on high until completely combined and smooth. Pour the filling into two small cups.
- Rinse the cup out and then add the strawberries and blend until pureed. Pour the strawberry puree on top of the chocolate pudding.
- You can either serve right away or put the pudding and puree in separate bowls in the fridge to chill if you like it cold.
